Female founder Saori Kawano opened Korin in 1982 as one of the first specialists in NYC for hand-forged Japanese knives. Known for their harder, thinner, sharper blades, Japanese knives have especially gained popularity in the past decade or so, and the options at Korin cover all of the bases — from $12 fruit knives to $2,000 sushi knives. A standard Korin-brand chef’s knife will run you around $200, with left-handed conversion and engraving options.
